Staying in India is even better when you can cook your own food. Not that I don’t like the Indian cuisine. I love it. I am cooking Kashmiri style myself but I don’t like as much salt as they are using and have it probably a little less on the chili. I just love those different vegetables that are available here even in winter now. There is “Al” which is the long bottle like vegetable on the right side and eggplant and bell peppers, eggplant and cucumbers, and bitter melon which I like especially and then there is “Hark” which is a kind of mustard leave and a staple in Kashmiri cooking. What I found especially practicall is that every time I shop I get a bunch cilantro leaves and a handful of chilies thrown in with my vegetables, just enough for the meal at hand.
